Scramble Tofu

Oats, bread, pancakes, yogurt and eggs are all fine breakfast or any time meal options. Nothing beats my scrambled tofu breakfast though! It is low in fat, high in protein and really really satisfying. Give it a go and let me know how you feel please.

Ingredients *( 2-3 servings)

  • 1 Tbls olive oil

  • 1 med small onion, diced

  • 325 gr tofu (press with towels to bring water out)

  • 1 tsp turmeric

  • 1 tsp nutritional yeast

  • 1 tsp garlic powder (optional)

  • 1 pinch of salt

  • 1 pinch of black pepper

  • 1 zucchini, diced ( optional)

  • 3-4 cherry tomatoes ( optional)

  • 1 handful of spinach (optional)


  1. In a non stick pan put the tofu and cook for 4-5 minutes until golden brown. Remove and place in a plate.

  2. Add the olive oil, onion and all seasonings *(turmeric, nutritional yeast, garlic powder, salt and pepper). Cook for 3-4 minutes. Add vegetables if you like and cook further.

  3. Put tofu back in the pan and stir
